Tray coolers mechanically are similar to the tray proofer and can be designed for conditioned or ambient cooling environments. The Henry Group's bakery tray coolers can easily accommodate changes in pan sizes. These bread tray racks are designed as an integral part of a fully automated line. They also benefit from the ability to utilize space efficiently. The design variations allow the bakery tray cooler to be built over the top of existing equipment such as ovens or to be fully floor-mounted. Tray coolers can be located on a different floor of the bakery and discharge and load on another floor. The tray circuit is a flexible design and lends itself to difficult space configurations when other coolers may not be an option.
