HEB San Antonio: Balancing an Uneven Bake

The Challenge

HEB’s Baker Thermal DFG hearth-plate oven was baking unevenly, with the control side and non-control side at visibly different temperatures and the damper run open as a workaround. The result was an uneven bake and an efficiency complaint.

The Work

Hank Pickering and Morgan Henry were on site for two days. They baselined the oven with mole runs across three zones (control side, center and non-control side), balanced the burners, repaired the ignitor, flex hose and gas line, and repositioned the coloraiders.

The Outcome

Full bake throughout, at about 8% moisture with minimal color variance. Production restarted by the afternoon of day one.
